I admit it. I grew up on black beans and rice and now that I’m older I have never tried making them from scratch! However, I do know how to make black beans from a can taste frekin’ awesome! This recipe is very easy to replicate and is a great way to impress any guest that you invite over for a dinner party. If you don’t tell them the recipe is from a can they would never know the difference! (Don’t worry this “can” be our little secret…I promise I won’t tell!)
- 2 x 8 oz. can of black beans (El Ebro for best results)
- 1/4 of a green bell pepper
- 1/3 of a yellow onion diced
- 1 garlic clove diced
- 1 teaspoon of Adobo
- Cracked pepper
- 1 Bay leaf
- 1 tablespoon of olive oil
Step 1. We need to make a “sofrito” this is going to be the base for our recipe. Take the green pepper, onion, and garlic clove. Finely dice them together or use a food processor to finely chop the ingredients. *Note: Do not over process the sofrito, it will become mush.
Step 2. Take a medium saucepan and coat the bottom with one tablespoon of olive oil. Turn the stove top on to medium heat. Once reasonably heated, place the sofrito in the pan and sauté until peppers and onions become somewhat translucent and soft.
Step 5. Turn the heat down to low and cover. Cook for 30 minutes and enjoy!!!!
My favorite way to eat black beans is in a bowl like a soup. I take a little bit of white rice and place it first at the bottom of the bowl and ladle the beans over. Crack fresh pepper, drizzle some olive oil and enjoy!!!
